looking for the best way to virtualize the n3600 with a v7000. will the migration wizard work in this case? do people typically just robocopy the data over?

If you attach your N3600 behind V7000, then you can use the migration wizard and all the features of the V7000. We have N3400 attach behind V7000 and it works well.

is it as simple as just attaching the FC cables and then the legacy disks will show under external storage?

It is simple. Make sure your N3600 FC ports that will be zoned to V7000 are of type Target. Once this is change to Target then zone your N3600 to V7000. After zoning, the V7000 will see N3600 as external storage. You can then create volumes from N3600 and map to V7000.
