Can we use DB2 Express C in open source projects? Are there any existing open source solutions utilizing DB2 database?
Any insight on this matter would be highly appreciable.

In my opinion, and at least what I know, you could use DB2 Express-C freely in an Open Source project, as it is "free to develop, deploy and distribute".
I saw that if you are going to redistribute DB2 with another software, you have to fill a form explaining the software, but lately, I have not seen that (probably the things are now easier)

If you want to install DB2 when you install your software, there are many examples to include the DB2 required components. The examples are in the 'sample' directory.
